One of our absolute top, number one, favourite garlic recipes is THIS awesome mushroom soup. Seriously...if you like mushrooms and garlic, you have to try this. Many a guest at the Ecolosophy patch has polished off a bowl (or two) of this scrummy soup and declared it the best ever… even those that do not like mushrooms!
We've taken this as positive proof that garlic makes everything better…even wet and windy days inside!
Garlic and Mushroom Soup Recipe
Using a deep soup pot, sauté the onions and garlic in the butter then add mushrooms and cook for a few minutes, stirring the butter through and softening the mushrooms.
Add the parsley and stock and allow to simmer for about ten minutes. Once cooked and slightly cooled, 'zizz' with a stick mixer or your tool of choice.
Serve with a dollop of cream and more parsley garnish...and try not to eat the whole pot in one sitting.
